This is an amazingly simple recipe which I scored from a pinner on Pinterest. Who would have thought that by mixing jelly (Jello for our American friends) and sweetened condensed milk, you could make delicious coloured and flavoured popcorn? You can use any coloured and flavoured jelly, but I have not tried this with sugar-free or low calorie varieties, so if you do, share your experience in the comments. As this is the first time I made it, I decided to make it on the stove top to work out the best temperature. It can get a little messy at the end I HIGHLY recommend you soak your pan immediately in hot soapy water so cleaning is much easier.
Not only is this idea great for special holidays like Australia Day, Christmas, Halloween, Valentines etc, but imagine how awesome this would look in those lolly jars for a lolly buffet or party display table? Jelly Popcorn
10-12 cups of popped popcorn
1 package jelly of choice
1 can sweetened condensed milk - full fat NOT Skim.
1 shallow baking tray lined with baking paper or foil.
What to Do
1. Line baking tray with foil or baking paper. If you using foil grease well with butter.
2. Put popped corn on foil and remove unpopped kernels, place in oven on 100degC.
3. On LOW heat (must stick to this or mixture will burn quickly) add condensed milk and jelly and stir continuously for 4-5 minutes. The mixture will bubble and thicken.
4. Take popcorn out of oven, and working quickly, pour the mixture evenly over all the popcorn and mix the popcorn around to coat well.
5. Place in oven for 20 mins, but take out and stir every 5 minutes. Make sure you leave it in for the full 20 minutes and stir at least 4 times. If you don't the mixture won't set properly and will become sticky and taffy like when its time to eat.
6. After 20 minutes, take out of the oven and allow to cool. Break up into pieces and enjoy!
To make 2 or more flavours, you will have to repeat this process for each batch of colour.
