Bertolli Olive Oils are for sexy people!

What does Extra Virgin, Classico, and Extra light have in common? If you are a foodie then you might have worked it out, if you aren't then I will give you a clue or two. They are all made by Bertolli and one can be used on cold dishes and the other two on hot dishes. I will let that simmer a little in your brain (pun intended however bad you think it is!).

Once upon a time, I thought that you could buy one type of olive oil and it would work with any dish and in any way you needed it to. However, this is not so and I recently discovered there is a better way to make olive oil work for me perfectly in my cooking every time. The smart people at Bertolli have bought out three olive oils and have clearly labelled how each can be used for your cooking.  When I got my oils I put them on my bench top and the sun was shining brightly through the glass bottles which illuminated the liquid so well that I almost wanted to take a swig from each bottle. I managed to contain myself but my mind instantly wandered on how I could use these oils and I didn't want to waste anytime.

That night I cooked up a chicken breast in the oven. I splashed some Extra Light on the base and laid the chicken breast on top. I sprinkled some Masterfoods Tuscan seasoning over the top and splashed over some more oil. I baked this in a preheated oven of 180C for 10mins and the breast over for a further 10mins. It was exquisite. The flavour was subtle but married so well I was licking my fingers and soaking up the juices with bread!

The chicken was just too good, I gobbled it up before I remembered to take the photo of the finished product! As the chicken worked out so well, I figured I would try the Extra Virgin for a salad dressing.

This is my mixed quinoa salad I made for work. I used:

cooked quinoa
baby spinach leaves
leftover BBQ chicken (optional)
half a Lebanese cucumber deseeded and chopped
tomato chopped
1 stalk of celery chopped in small pieces

Dressing
Red wine vinegar
Bertolli Extra Virgin Olive oil
Dijon mustard - a small dollop
salt and pepper to taste

Using a container with a lid, place all ingredients in container and secure lid. Shake vigourously until all ingredients are combined and pour over salad of choice. I don't have measurements because I didn't really measure as the salad was just for me. I went by taste. Next time I will try it without the Dijon mustard, but other than this, the oil made it perfect!

So by now you should have guessed  that Extra Virgin, Classico, and Extra Light are all olive oils and the other common thread is that they are from Bertolli. Like me you should now know that your foodie pantries should have three oils,  not just one. Each oil will serve its rightful purpose in making the right foods delicious.

Classico: is best for barbequing and roasting.

Extra Light: best for baking and frying

Extra Virgin: best for salads, pasta sauces and dips.

Bertolli are currently running a competition on their Facebook page. Click on the link to see how you could win $3000 of Westfield vouchers or 1 of 20 antipasto hampers. I'll just give you the "heads up"on what you will find on this page. The commercial may shock some of my more conservative viewers, so just keep that in mind. Its not nudie rudie, but you will see some "cheeky" angles!

For more information on what you can do with the Bertolli range you can check out:

Good Luck if you choose to enter the Facebook competition and remember if you consider yourself to be sexy then you must be a Bertolli person foodie or not!

Crio Bru, I love you!! Giveaway

I have recently discovered a great drinking chocolate by the name of Crio Bru. This is a 100% cocoa drink that brews just like coffee, but without the caffeine hit! I was lucky enough to receive some to try out. I was sent Coca River, and Vegal Real, but there is also Cavalla in the range.  Vegal Real, which means 'Royal Meadow' has notes of strawberry and citrus which are actually found naturally in the cocoa bean. Coca River has notes of green banana and blackberries and has more of a chocolaty smell than fruity Vegal Real. Cavalla, which I am yet to try, has hints of dark spice, cinnamon, and coconut, now doesn't that sound yum!
I have to admit, when I made my first cup of Crio Bru, I was a little taken back. Not necessarily in a good way. I followed the instructions on the package and I brewed the cocoa in my HMP in water. I took a taste and while it was powerful, it wasn't particularly pleasant and I felt it had to be an acquired taste. However, this is 100% cocoa, so no added anything! Its nothing like your store bought drinking chocolate and there is no PHENYLALANINE(just google that for an idea on what it can do to your body!), no glucose solids or fake sugars, no gums, and no colours or flavours that are easily found in your low calorie and low fat chocolate drinking mixtures.   Its all natural, so the taste is going to be nothing like what you expect it to be. Since then I have done what all good cooks do and experiment with the production methods.

I continued for a while brewing in water and then adding milk and stevia/sweetner which I tended to enjoy. I then went to the Crio Bru website and discovered some interesting recipes on how to make good use of my Crio Bru, other than for drinking purposes. As I went through some of these, I was realising I should pursue the production method in another way. I felt that milk ( I always use and prefer low fat) was needed to brew from beginning to end. This to me, has made all the difference. I also used almond milk this morning and it was so amazing! If you are using a thermal mixer to brew, I recommend that after brewing, strain it and then put it back in the thermal mixer, adding your sweetener of choice, for another 10 secs on speed 6. This will whip it into submission and create a frothy mixture as good, if not better than what the barristas create.

Other than the taste, there are some other benefits of Crio Bru:

  • Rich in antioxidants - by weight cocoa has more than almost any food in the world!
  • Low in calories and carbs
  • Little to no caffeine
  • No fat, sugar or sodium

When I drink this in the morning, I feel a lot sparkier and focused by mid morning and I don't feel hungry so no more need for grazing or eating not so good snacks. I've discovered that cocoa is a natural super food and is an appetite suppressant and increases your energy! Woo Hoo!! Now I can enjoy a delicious and natural drink that fills me up and doesn't make me want to nibble at anything in between!!

Now for all the Dr Oz fans out there, I found out that he recognises that cocoa is a great super food that can aid in your weight loss goals. In a recent show he said:

"This is a really cool idea. I think this is something really worth trying. Here's what I love about it. It's why it can help you burn fat faster. It has a natural stimulant, not caffeine, called theobromine that can boost your metabolism. It's very safe. It also has a fat blocker. It helps get rid of the fat in your body by blocking an enzyme you need to digest fat, so you never absorb the fat into your body." - Dr. Oz

So there are some really great benefits to drinking Crio Bru, how about cooking or baking with it? If you head to the website, you'll find some amazing recipes to help you make use of this great product, but as for me I had something else in mind! I straight away thought of a chocolaty version of Tiramasu! I call it, Crio Bru- Masu!!

Crio Bru - Masu

1.Aftter brewing the Crio Bru in milk in the Hotmix Pro, add some stevia so it has a light sweetness to it.
2.Soak the biscuits and line the base of the deep medium sized rectangular dish
3.Whip 600mls of thickened cream in HMP with paddle attachment a teaspoon of sugar and seeds scraped from one large vanilla bean. Use speed 3 for 45 secs. Check consistency and if not thick and stiff peaks, do 10 secs at a time. Divide cream into thirds and add sifted cocoa powder to one third and mix through.
4. Spread one lot of vanilla cream on first layer of soaked biscuits.
5. Layer soaked biscuits on top of vanilla cream.
6. Spread chocolate cream on biscuits.
7. Add another layer of  soaked biscuits.
8. Finally spread remaining vanilla cream and sprinkle with sifted with quality cocoa powder.

This was a delicious recipe and well received by family and friends.

So if you are intrigued by Crio Bru and want to give it a try, you can head over to the Crio Bru Australian website to find out more and order your own. Otherwise you can try your luck by entering my giveaway. All you have to do is:

Aussie Handmade Goodie Bag Worldwide Giveaway

My two passions in life outside of my family and work are cooking and crafting. I love to make my own things when and where I can and if I can't make it, I love to buy it! I made the handmade pledge about 4 years ago when I discoved Etsy and fell in love! Since discovering Etsy I have found many other handmade sites, I begun to realise the amazing talent spread all over the world. There is something truly amazing about the talent of a human being. I love how people can see the use of things in so many different ways. My personal crafting at present, is in hair accessories. You shouldn't be suprised how many people make hair accessories, but what's amazing is that there are so many ways you can make an attractive or cute hair clip or hair band. Its marvelous!

As I saw so many awesome things on Etsy, Pinterst, Madeit, to name but a few I started to think, "People need to know about these people". I want everyone I know or am connected with to know of the talent locally, here in Australia and the world.  So I began this little project of mine. As Christmas is upon us, I thought I would introduce to you some talented locals who make their own stuff! Are you a little bit craftsie too? I have been working on a 'little' business since the beginning of this year. I love hair clips and I have been making hair  accessories and jewelry for over 4 years now. I started making hair accessories, as alot of us do, for my daughter and then family and friends. I always got positive reactions so I then dabbled in selling on line. I also sold to a few children's boutiques before I had baby number 4.

I recently renamed my shop A Little Bit Craftsie?, because that is what I consider myself to be and my shop is for those who like items that are a little bit craftsie!! One of my favourite sites is Etsy, but not far behind is Pintrest. I love to see how creative and clever humans can be and I find so much inspiration in these two sites and in so many things around me. When I see what other people can do it get's my creative juices flowing and I can't stop myself.   I love to create items that are bright and cheerful and will bring a smile to not only the wearer, but to those around them.

In my shop you will find super cute hand crocheted hair clips that will definately make you smile! From cute little owls, to 3D flowers and fairytale mushrooms, basically a little princess's heaven! If you prefer a more simple approach, I have some basic mini mouse designs, some resin flower clips and other items that I hope will suit most tastes. I am open to making hair clips for party favours, so keep me in mind for your next birthday celebration!

I don't limit myself to just hair accessories. I also design jewelry. From earrings to necklaces and bracelets for girls up to ladies. I use quality items including sterling silver, glass, swarovski crystals, rhodium plated, polymer clay and gold/gold plated.

Joey Designs Giveaway

Back in May I had by daughters birthday party and I wanted to put something different in the goody bags for the girls to take home. I love stickers, my daughter loves and her friends love them too! So I thought, stickers were the answer. However, as is my nature, I didn't want any old stickers. I wanted something unique and memorable, so I headed to one of my favourite crafty places, ETSY.com, of course. Here I disovered the wonderful talent of Danielle Miles, who owns and runs JOEY DESIGNS. I instantly fell in love with her cute and unique designs and illustrations. I HAD to have these stickers and I also asked her to make up some rainbow stickers and peace signs, which she did with no hesitation.  I asked Danielle a few questions so we can get to know her a little better.

Tell us a little about yourself.
I  live in Queensland next to the beach and have lived in the same place all my life. This is probably why I love the sea so much - after school, I went to Uni to study Environmental and Marine science which landed me a full time job at an Aquarium. In the few spare minutes of my day I am frantically designing, cutting out and packaging stickers and buttons. I have a children's book waiting to be published at the moment as well. I'm married to a wonderful man who supports my work... and who bought me my new button machine! I also have a Jack Russell who is a tad mischievous, but we love him.

What/who is your inspiration?
The beach is my inspiration. If I have an artist block, going to the beach helps me think and clear my mind. I'm a bit biased, but my husband is an inspiration to me as well. He is always helping me with new ideas for designs.

How long have you been creating?

I have been creating ever since I held my first paint brush... my first ever painting at school was a red and blue house. I still remember it to this day! When I first discovered felt pens on crisp, white paper I started designing my own cartoons. In the last 5 years, I have merged into the world of digital art and printing. I'm proud of myself to have come this far as it's all natural talent.

What would you like to be doing in 5 years?

In about 5 years, I hope to have children. I also hope that I am able to expand my etsy shop into a full time job. I may have to invest in a die cut machine... I don't know whether my fingers can handle another 5 years of hand-cutting!

Favourite Quote.

I don't really have a favourite quote but I do like, as my hubby puts it... 'just keep stickering!'

Danielle's shop has a selection of stickers, magnets, pin backs, cards, and gift tags. I have two great mystery packs of her stickers and buttons to giveaway to two lucky readers. All you have to do is go to her STORE and state in your comment on this blog, what items you like best in her store. Make sure you leave a way for me to be able to contact you, otherwise you might miss out!

Giveaway ends midnight Sunday 17th July AEST. I will post winners here on my blog so please check back. If I am unable to contact a winner within 3 days of posting winners, I will have redraw another winner. I will use random.org to select a winner.  Giveaway is open worldwide. GOOD LUCK!

Food and Wine Show Sydney 2011

What a show! Wow, this year was so amazing and I would have to say at least 10 times better than last year! Last year I had my baby son with me, which was a bit of a challenge, mainly because I found it had to manoevure his pram in and out the crowds and unfortunately some people weren't willing to giveway to parents with prams which was sad. This year, I came with my 10 year old daughter who is developing a foodie persona like her mum!! There was no prams required, so hitting the crowds to just a matter of waddling like a duck or penguin and getting through at a slow and steady pace!!

So what did I buy? Well I did only take a certain amount of money which I didn't want to go over, even though I did :P! Hey we are talking about food here. For some women its beauty products, for others its designer brands. For me, my weakness is food and finding great products to share with others. Before I start, I do want to appologise for not taking pictures. I was so excited when I arrived and how many exhitors there were and once I started talking to people I didn't think about getting my camera out.
[Note to self, arrive at show with camera in hand so I don't forget to take pictures!]

I have taken pictures of the products that I purchased, so you know what they look like. For products that I highly recommend, but didn't purchase I will provide a link for you to check them out.

One of the first companies I was so happy to see was a company that I discovered for the first time at the Melbourne Food and Wine show. Careme Fine Pastry, I am so in love!! I have never heard of pastry in different flavours and readily available. The owner, Claire Wood was there to talk about her wonderful product. Visually you want to envelop your best tasty fillings as soon as possible, but to then have a taste, you 'know' you have to use this pastry! I really wanted to purchase the pastry then and there, but unfortunately I wasn't going home straight after the show, and was concerned about how it would last until I got home. However, I do know where I can get the pastry from now and if you want to know too, here is the website link, CAREME PASTRY.  My two favourite products were sour cream puff pastry and vanilla bean shortcrust pastry. I can't wait to make my favourite, custard tart with the vanilla bean shortcrust. If you are entertaining and want your guests to have a lasting impression of your pie, sweet or savory, then Careme pastry is your best choice.

Sour cream puff pastry
Vanilla Bean shortcrust pastry

I then discovered a company by the name of Lakelands Olives. They are a biodynmaic organic olive oil business.  I was most impressed with their Lemon oil and Mandarin oil. This oil was amazing and the flavour of Mandarin so strong that I felt like I had eaten one!
I was told that the flavour is so impressive becasue they use the whole fruit, skin and all also also because they use the cold press method. I am not 100% sure but I think they maybe at the Organic Expo in Sydney held in 6th and 7th August. Otherwise, check out their website, LAKELANDS

Sharing the same store with Lakelands, I learned about PUKARA ESTATE. They also had olive oils, but the most impressive products for me, were their vingears. Have you ever heard of Guava Vinegar?? I had never thought that a product like this would be possible, and taste so good!! The flavour is so amazing and as soon as my tastebuds got excited, my mind was considering all the ways I could use the vinegar in my cooking.  They also have fig vinegar, blackcurrant, and vanilla cinnamon to name but a few. But my heart was with the Guava vinegar and this was what I purchase.
If you are tempted to try this vinegar, here is their website, PUKARA.

My favourite purchase of the day was one I had waited 1 year for! I discovered these knives at last year's show and my mum ended up purchasing one and has sung its praises all year. These knives are at a bargain price of 50% off the normal retail price, so worth the wait!. I purchased the Titan 21 which is a titanium knive that needs sharpening at least once every 18months or so. Its is light weight which is such a welcome change to what I have been using. The knive that I currently use is good, but I need to sharpen it at least every second day in the week. So I am so happy I have a sharp knife that I don't have to worry about sharpening as often anymore.  For more details here is the website, FOREVERKNIVES.

This next product, was a real no brainer for me. If you have been following my blog for a while now, you know that I am passionate about food storage. You may also know that I am trying to update or modernise the concept of some foods that can be stored in your food storage long or short term. I am always looking at great products that can deliver a taste sensation but also be stored well. I am also becoming a bit braver in making Indian cuisine. I really like indian food but the books I have read and the shows I have watched have intimidated me a little. It looked like a lot of processes, and having the right ingredients to make sure your food tasted its best. So I figured I would only enjoy Indian when I was eating out. Since then, I have befriended some work colleagues who are from India or regions of India and have worked hard to convince me not to be scared of Indian cooking. When I found the stall, Mudgeeraba Spices and Curry Blends, I knew it was meant to be!! I was even more excited when I was handed a sample of their butter chicken made from their butter chicken spice blend. It was so delicious and I never knew there was a spice blend for butter chicken. I have only ever used a sauce mix from the supermarkets. I enquired about a good curry mix that was not too hot, so my kids could enjoy it. The vegtable curry blend was the answer and the smell was sensational. No artifical colours, flavours or preservatives and with a shelf life of at least 12 months and each jar that I purchased would make up to 30kg plus of meat curries, I was sold!! Teh two jars I purchased caressed 300g of spice blends and cost $35 for the two jars. Check out their website for more info, MUDGEERABA SPICES

I found the show was embrassing a mulitcultral flavour and this made me happy, because I think there are some amazing products out there that we can embrace in flavour and technique. I love researching different cultural cusines and adapting these to my everday cooking.  I discovered a new brand I had not seen before. Kuhne, with two dots above the u!! Kuhne have quality german products like mustards and a beautiful savoury cream for potato salads( the name has stepped out of my memory for the moment!) but they are just gorgeous and worth a try when you see them in your IGA supermarket.

When my mum returned from a trip to Indonesia some 15 or so years ago, she bought back something with her that I will be forever greatful for, Kecap Manis! What an amazing sauce! Kecap Manis is a sweet soy, so its thicker than normal soya sauce and has a sweet flavour. Its perfect for marinades, sauces, fried rice, to add to omelettes, to stirfries, there is many applications and I can guarantee, once you buy one bottle, you will keep buying. It will become a staple for your asian cooking. I purchased this bottle, as I know the brand and at $2.50, it was a bargain. I also like that the bottle was plastic and squeezeable. I have had bottles in the past that are glass, and you stand for ages waiting for the sauce to come out.

I chatted for a long time with Craig Lyon's wife Karen from Passion of Tahiti. The Bora Bora vanilla pods are to die for! If you like vanilla then you have to swing by their website and check out the beans they have on offer. The Bora Bora beans have a nice length but they are so plump and juicy and have an amazing width that I have not seen with a vanilla bean before. The aroma is mesmerizing. I have been told that some well known chefs are super excited about Craig's vanilla beans, so be sure to check them out. Be sure to take a look at the vanilla bean powder which is 100% vanilla seeds with no additivies or anything added like a paste has. The, product, however,  that has captured me more than anything else, even though I rave about the other ones, this particular product, really has captured me. It's the cold pressed vanilla extract that is not made with any alcohol at all! Never heard of such a thing until now! If you have ever purchased a good quality extract, when you smell it, it has a nice vanilla smell, but the alcohol does cut through and distrupts the vanilla note. Also if you ever accidently add too much extract to a frosting or cream, you will get a taste of the alcohol, which I really don't like. With cold pressed vanilla, there is no chance of this! Its all vanilla!  I can rave on about it all day, but I won't!! Pop on over to the website and see for yourself. The site is under a little bit of construction but I was told that purchasing would be ready as soon as possible, but you can contact Craig vie the e-mail address on the site with any queries.

Well as you can tell I had a great time. I enjoyed talking to people and learning more about their products and business and I am so happy to pass this onto you guys. Can't wait to see what is install for next year. I also hope I can work a bit with some of these businesses to bring some more amazing products to your kitchens.

Sydney Good Food and Wine Show Giveaway

As I totally lurve my food I totally lurve this show! I have been going to the GF&Wine show for ages, I think I have only missed a couple. Some of you know that I won a competition that was run by Lastminute, and I scored free tickets to the Melbourne show and also I met Gary Mehigan and George Calombaris. It was a totally awesome experience and I highly recommend you see their celebrity show at the Sydney show if you go. Its like a Master Class and this time you get to smell the aromas not just see them and wished you had smello-vision. I love the show so much I figured I should do 4 lucky people a giant favour and giveaway some tickets to this year's event. This way, you can spend some extra money and do one(or more) of the classes like, the Cheese Matters Discovery class, the Fisher and Paykel Celebrity theatre, Victor Churchill Butchery Class, Adora Handmade chocolate class, or for the wine enthusiast the Riedel Decanter Bar session.  One of the main reasons why I like going to the show is to taste test new products that are out there and in particular the smaller food companies that make such awesome food and are trying to reach the masses. It is us, the people who can ask our local supermarkets, or delis to carry these products and help the smaller buisness get their awesome products out there and grow the Australian influence in the food and grocery market.

So what do you have to do?

1. Become a follower if you want
2. Leave a comment telling me one of your favouritist meals.
3. Like my Facebook page, which you can do by clicking the button to the right and you will get an additional entry, leave an extra comment saying you have liked me. If you have already 'liked' my page then leave an additional comment saying so and it will earn you an extra entry.
4. Giveaway closes Sunday 19th June Midnight AEST.
5. I will announce the 4 winners on my blog on Monday 20th June in the evening. I will do my best to contact winners, but it will be up to you to come back and check if you are a winner. If no contact can be made to a winner within 3 days. I will redraw for another winner.
6. The prize is a ticket for ONE adult entry worth $29.50 and I have 4 to giveaway.
7.Winners must have an Australian address. The show dates are 1st -3rd July 2011.

Good Luck to all!

I would like to thank the people at Ogilvy Public Relations Worldwide, for providing these tickets, you rock!!
