I am mother to 5 kiddos. I have three teenagers, who can be Meanagers sometimes!! My other two are 9 years and 18 months old. It's interesting to say the least juggling not just different personalities but going back to baby steps again! This is my life, my food, my humour, and my sanity....well, at least I think I am sane!!

Strawberry, Banana, and Pineapple Dairy Free Vegan Ice Cream
Ingredients
4-6 medium sized strawberries cut in halves
2 small to medium well ripened bananas cut into discs
1 spear of pineapple cut into small chunks
1 teaspoon (or so) coconut sugar (optional)
1 can coconut milk (full fat)
This is a super simple and healthy way to have ice cream without the dairy. Put the fresh strawberries, banana and pineapple and in a container or a zip loc bag and put that into the freezer. Once they are frozen or even if they aren't frozen solid, I place them in a blender with canned coconut milk. I choose canned coconut milk because the cream separates from the liquid and you get the benefits of both. The liquid helps the fruit to blend well and the creamer part makes the creamy texture. To separate the liquid and the cream, you can either put the can in the fridge over night, or if its cold enough in your pantry i.e. not summer, it should solidify and separate just as well. I didn't use all the cream for this serving. Add a couple of dessert spoon heapings at a time and use your senses to work out what you prefer. I also added a bit of coconut sugar, but this is optional. You could easily have this for breakfast. lunch, dinner, or dessert. So versatile and add the fruit you like best. You can even add some cacao powder for a chocolate taste.

Healthy Breakfast Choice
If you want something healthy and filling for breakfast without being to fussy, this is a good way to go. I don't have a particular name for this. It is completely versatile and you can choose your own adventure, so to speak, with the ingredients. This time I chose:
1 medium sized banana chopped
2 ripe medium sized strawberries chopped
1 handful of raw almonds chopped
some shredded coconut
some chia seeds
some golden flax seeds
honey to taste
This is dairy free, gluten free, processed sugar free, and suitably vegan. I am not a real vegan, but I do love vegan recipes and make them often. I do have to have dairy free, though I have to admit I still eat ice cream now and then and I don't check every stinkin' label for no traces of dairy, but I do feel much better leading a dairy free lifestyle as much as I possibly can. Hope you like this recipe:)

Almost Vege Burgers - Bacon Added!!
I call these almost vege burgers because, while the majority of the ingredients are vegetables, there is a small amount of bacon in them. I had to add the bacon, so that my kids would give them a go. Unfortunately, not all my kids thought that was enough:(. One of my sons felt there was far to much green in them, so would not go anywhere near them. My daughter and my youngest son ate them and gave them a thumbs up, my other son, felt there was not enough meat in them, so again wouldn't go near them! Well, you win some, you lose some! Personally, I love them and my HMP came in handy to make them in a short period of time.
1 Carrot chopped in three
1 Capsicum roughly chopped
1/2 large red onion roughly chopped
1 broccoli
1 handful of baby spinach
5 mushrooms
1/2 tablespoon of chopped/minced garlic
5 pieces short cut bacon chopped, cooked and cooled
1 egg
1 cup flour
1/2 cup bread crumbs
Salt and pepper to taste
1. In HMP add above vegetables and chop on speed 6 for 10 secs.
2. Add egg, flour, crumbs, bacon, and salt and pepper to taste. Speed 1 for 15-20 secs. Make sure you check consistency, you may need to add a little more flour should the mixture not keep together. Add to a clean bowl.
3. Roll mixture into palm size balls (or bigger if you like) pat out into patties and refrigerate for at least 15 minutes.
4. Heat frying pan to med/high or Teppenyaki pan if you have one. Spray with oil and cook until brown, turn and cook other side until brown.Repeat with remaining burgers.
Serve with salad or on burger buns. These are really good the next on a sandwich or even on their own. For the chilli fans, you could add a fresh red or green chilli in step one or dried chilli to taste in step one.

What's in season?
Hi all, just a quick post tonight. Have you ever seen a recipe and thought,"Ooo! I so want to make that", then realised at the fruit market or supermarket that the fresh produce is not in season and either not available or ridiculously expensive because its has been imported from a faraway place? Well, I just thought about this and decided to google it and came across a link via Woolworths, for those of us who live in NSW. Basically, you can use this link to find out what's in season and the plan your meals accordingly, and also check out the recipes you have patiently waiting for you on Pinterest or the like! I hope you find this helpful:)

PS. The link will show what's good for March, but once your at the site, you can search for whatever month you want, if you want to plan ahead!!

FREE SANITARIUM COOKBOOK
I mentioned this in the previous post about free stuff, but I wanted to let you know that I got my cookbook last week and I am very impressed with it and highly recommend you get yourself one too. I have already made one of the recipes, Vege Satay and rice, this is my title not theirs! But if you are into food storage recipes, this is a great one to have on hand. All the recipes are vegetarian but meat can easily be added to most of the recipes, but it is good to know there are some great recipes that are healthy and easy on the budget. Sanitarium also offer a free service to help with any nutritional information one might have. Anyway enough plugging, if you live in Australia use the link to grab your 100% freebie!
I have just realise that the above link is for the download, try the link in the previous post to see if they are still sending the actual books, if not, the download will still be good.
I will be posting pics of my latest recipe soon.
