Pina Colada Mountains

I had a hard time working out what kind of name I should give this recipe, but I decided on the above name, purely because of how the dessert looked. If you can think of a better name, I would love to hear it!
I thought of this recipe because my kids love an ice block called SMOOZE, have you heard of it? Its fairly popular here in Australia, although I wouldn't say everyone household has them in their freezers. Basically its an ice block that looks like a mini sunny boy and is primarily made of coconut milk. No artificial flavourts, colours or preservatives. They are a good snack to have. Anyway, my kiddies were asking for them and I didn't have any on hand, so I figured I would make some of my own. So I went to my trusty food storage pantry and got me some coconut cream and canned pineapple and this is what I did.

Ingredients
1 tin of coconut cream - full or light its up to you
1 tin of pineapple - can be rings, chunks or crushed in natural juice

Method

Pour tin of cream into ice cube trays and freeze
Pour pineapple into a zip lock bag with some of juice and freeze.
Put rest of juic in fridge.

Once items in freezer are frozen take out and allow to thaw for about 10-15mins.
Add to blender or food processor with rest of juice and blend until smooth. Scoop out into bowls and enjoy! ( you can also add a scoop or two of ice-cream)

Best thing about this dessert is you can add any kind of fresh or canned fruit that marrys well with coconut. If you don't want to wait for items to freeze you can easily add ice to your blender so you can a better texture, but I think it works better for the items to be frozen.
