I love pesto! I really do, I think its one of those amazing ingredients that can be used in so many different ways. You can make it with specific ingredients, or you can throw together leftover items or things that you don't want to go to waist. Nothing can really be wrong to add, if you like it, then you will eat it!
A little while ago I had a taste for rocket and as I have continued to procrastinate in growing my own, even though I 'know' how easy it is to grow and how quick it is! Do as I say and not as I do, I think that's the saying that comes to mind!LOL Anyway, I had purchased some then forgot I had it and purchased another packet of it. I did not want to waste it so I decided to make a pesto. So with some spinach, my trusty jars of minced garlic and chili paste, some semi dried tomatoes I had to use up, and some great parmasean cheese. I made something quite marvelous.
Ingredients
1 packet of rocket and baby spinach - Woolworths brand
2 teaspoons of minced garlic from a jar
(1-2 cloves of fresh garlic can be used)
1/2 teaspoon of chili paste from a jar - 1-2 small chilis if you prefer
left over semi-dried tomatoes - I had about 6
dash of sea salt flakes and cracked pepper
2-3 smallish chunks of paramsean cheese
a drizzle of olive oil
Method:
Add all ingredients expect the oil to a food processor or blender and blend until combined.
Drizzle a little oil and allow the mixture to moisten. I don't believe in heaps of oil at this stage, and sometime I add just a little oil and a bit of water/stock too.
Pesto can be added to hot pasta for dinner or a snack. You can add it to some mayo and have it in potato salad, pasta salad, chicken salad, or used as a dressing (add vinegar of choice) for a green salad. I added some hommus(not homemade, this time but I usually do!) and used it for a spread for my sandwiches. You could if you wanted to also add some cream for a creamy pesto dish. You don't have to store fresh cream all the time either.
Here is what I store in my pantry so I know I always have cream. It can be whipped as well, all you have to do is refridgerate it for an hour before you whip it. You find it where the jelly and custards are at the supermarket.

Looks like a great, new way to make pesto. Pesto is actually a staple food to me. In fact, I bought a bottle of Moringa Pesto, its kinda new, but healthier than the Basil Pesto. Will post the recipe ones I made it. For now, Im kina slacking off from cooking.... U

I LOVE pesto! Can't get enough of it...which isn't good as Mr.P isn't the biggest fan! My fav thing to make with pesto I do for BBQ's...basically I get some tortilla's (like you get with the Old El Paso stuff), cover one side in pesto, sprinkle grated cheese all over and then cover with another pesto-covered tortilla, whack ont he BBQ (or sandwhich press) and wait for cheese to melt and toetillas to go a little crispy, cut into triangls and Hey Pesto (lame pun, sorry) a quick, simple and tasty appetizer. My friends love it!
