HotMix Pro: Coriander / Cilantro Chickpea dip


One might think that this is a hummus, however I do not use tahini in this recipe, so I don't think I can claim it to be:) This is a very easy and quick recipe that makes use of some basic ingredients that most kitchen pantries and fridges will have. If you don't have fresh coriander, dried can definitely be used, but I would suggest you refrigerate for an hour or so before serving.

Coriander / Cilantro Chickpea Dip

1 can of chickpeas washed and drained
1/2 cup mayonaise
1/2 cup sour cream or Greek yoghurt
1/2 lemon squeezed
1 tsp garlic powder - or more to taste

dash of olive oil
handful of fresh coriander
dash of salt and pepper

Method

1.Add all ingredients to jug and mix on speed 4 for about 30 secs. Scrape down sides and whiz on speed 5 for further 20secs.
2.You can add paddle and whip the dip on speed 2 for 20 secs if you wish. Refrigerated until serving time.
