Challenge 17 - WHAT MAKES YOU SMILE?

I like this challenge, it made me smile!!! Our house is always busy and there is a lot going on for one reason or another. Even though some days seem crappier than others, I always have (and appreciate) a moment when something makes me smile! Most times it will be something that one of the kids say or do. Like my son Liam who said recently:
"Mum do you brwember when i was wittle and I liked to pway wif wego all day wong!"
That just cracks me up! He said it so seriously and he is only 3, and he still plays with his Lego all day long! He so loves to talk but the way he talks right now is just gorgeous, I can't help but smile and now, I can only laugh on the inside becasue he has told me that when I waugh at him its makes him sad!
So what makes you smile?

ORGANIC A GRADE VANILLA BEANS


In congunction with the egg powder I will be taking orders for Vanilla beans. These beans are a grade Tahitian beans which are grown oranically in PNG. The poeple who grow the beans put money back into the community in which they have their farm and employ locals to work on their farms.

The beans range in length from 14-18cm. The beans have a shelf life of up to 18mnths if stored in an air tight container or glass jar with a screw top lid. If you happen to have a vaccuum sealer, this would make your beans last longer. If you are interested please e-mail me or leave a comment. If you are interstate I am happy to post beans in a regular envelope so it will only cost an extra 50c, if you want a padded envelope that will cost a little extra.

Blog This Challenge No.16

Yet another challenge I would like to be part of. Its quite befitting actually since my involvment at church with welfare and helping other to plan their three month storage. When you start with this role, you relise rather quickly how much you consume and how much you don't really need. I have come in contact with some truly awesome blogs where people have completely commited themselves to frugality and being as self reliant as possible. I wish to get there, one day! I am still struggling with little things like dressing my kids in name brand clothing, shopping at woolies because its convient when I know I could shop at aldi and save a little extra, but I just can't bring myself to go through the effort of unloading, and trying to keep up with the cashier while my two kiddies carrying on, then packing my stuff in bags, then packing them into the car, its a real effort for me!
I could do without buying lunch almost everyday with my darling hubby. I should take sandwiches when we meet for lunch. I could also do without snacking on chocolate and anything sweet I can find in my house! I am a real sweet tooth and even when I don't buy chocolate I will always have something sweet to nibble on, be it marshmallows, jelly babies or lolly pops. Everyone in my family and even my in-laws know me as the lolly queen! I will always have something sweet close by!
I have begun exercising this week to get my fitness back on track. It has been almost 9 months since my son was born, so its time to get myself sorted out and back to my healthy weight. So I can do without a half hour each day of doing 'other' stuff so that I can exercise, clear my mind and my body so I can be happier and healthier. I really do feel happier when I have had a good half hour to myself walking and thinking about stuff. So, yes, this shall be what I will be trying for a week. I hope by doing this it will bleed into doing without sweet stuff and then bleed into doing without other things that I don't really need!

TAKING ORDERS FOR EGG POWDERS


Well I have been checking out bulk order items for a little while and I think we need to get cracking on putting some orders in. I will spend hopefully no more than 2 -3 weeks taking orders and payments. The order will be placed and sent to me. You will need to come and pick up the egg powder from me or if you live interstate I am happy to post your orders to you I will find out postage costs and add to your order. Egg powder is an extremely versatile product and lasts for at least 12months when stored properly. You get approx 80 fresh eggs for each kilo of powder so if you like to bake it really works out well to have egg powder on hand. A meringue/pavalova mix is also available and this is perfect for pavalovas, merginues,french macaroons and so on! Approx 30g of the egg white powder makes a pavalova that serves 8. If you know of the Pavalova in an Egg, this is kinda what it is but much cheaper! With christmas just around the corner, its a good time to have these products on hand.

TWINKLE TWINKLE LITTLE PIE STARS


I was inspired by pie pops from a blog, bakerella. I believe she got the idea from another site. Anyway, I didn't have pop sticks, nor did I feel it was necessary to use them. I think its just as cute to not have them! All I did was thaw out two sheets of ready puff pastry. Pre-heat oven to 200C. Cut the shapes out drop about a teaspoon of jam(I used raspberry) onto the middle of the star. Place another star on top and press the sides down with a fork. Paint a little egg wash on top and bake in an oven of 200C and 10mins later you have your mini pie stars. You could sprinkle a little sugar on top before it goes in the oven. Its a great food storage dessert or snack. There are so many different things you could use as a pie filling if you didn't have or didn't like jam. Some ideas:


Piece of chocolate

Peanutbutter(and a piece of chocolate!!) or Nutella

Tinned Pie Apples

tinned peaches

crushed pineapple

Mash up some fresh or frozen strawberries or raspberries and mix in a little icing sugar

Mash banana

A caramel lolly or caramel top and fill with some chopped nuts


Anyway, there's a couple of ideas that can be found or stored in your cupboard.You could also dust with icing sugar for presentation.

The chidlers could help with this but mine were too busy watching MythBuster with daddy!!!

RED VELVET CAKE - WITH CHOCOLATE FROSTING


I have been wanting to make this cake for ages! I saw it first at Woolworths(groccery store) but it didn't seem appetising. Then I heard about it on The Ellen Degeneres Show as it is her favourite cake and she had if for her birthday cake. So of course I was further intrigued. It has only been since I have begun blogging and found out how good they are supposed to look and trying it at a church function, that I thought I MUST MAKE MY OWN! So with a couple of family birthdays in August, I figured it was time to show off and make my first Red Velvet cake. Now, I have to say that I was a little disappointed to find out that the main/secrect ingredient for a red velvet cake is really just red food colouring, and lots of of it! I just assumed there was something more. None the less I made the cake from scratch following cathie's (m.e) recipe which she got from Martha Stewart. The only difference on mine was I did add the cocoa, which apparently is the traditional way to do it.

Now the icing I have to say was originally white in colour as is the tradition, however I happened to run out of plain icing sugar/mixture and had to borrow from my sister-in-law and she only had chocolate left. That being said, it was a great mistake to make I think, it worked out just fine, and as no one else in my family cares about the tradition of velvet cake or even knew about it, they were none the wiser!! I did attempt to cut my cake through the middle but I did use the wrong baking tin so it didn't work out. So there was just an overload of frosting on the top, which my fam made no complaints about! When I make this again, I will try it with white/cream frosting and I would like to make a 3 layer cake.


Other than the cream cheese and the eggs (could easily substitute egg powder). The next cake I make I will be using egg powder. This is a good recipe that utilises your food storage items. Buttermilk, I think makes the cake, pun intended! You can make your own buttermilk from milk powder or fresh milk if you don't have buttermilk handy.


Buttermilk


  • Milk
  • 1 Tablespoon white vinegar or lemon juice

Preparation:
1. Place a Tablespoon of white vinegar or lemon juice in a liquid measuring cup.
2. Add enough milk to bring the liquid up to the one-cup line.
3. Let stand for five minute. Then, use as much as your recipe calls for.

RED VELVET CAKE

2 1/2 cups self- rising flour, sifted

1 1/2 cups sugar

1/4 cup of cocoa

1 1/2 cups vegetable oil

2 eggs, room temperature

2 1/2 tablespoons red food colour (I had a little over half of my little red bottle which you get from the supermarket and I put all of it in!)

1 teaspoon pure vanilla extract (essence 1 1/2 teaspoons)

1 cup buttermilk

1 1/2 teaspoons baking soda

2 teaspoons white vinegar


Method

Oven 180C grease and line baking pan

mix together flour, cocoa and salt in a seperate bowl

With an electric mixer on medium-high speed, whisk together sugar and oil until combined.

Add eggs, one at a time, beating until each is incorporated, scraping down sides of bowl as needed. Mix in food color and vanilla.

Reduce speed to low. Add flour mixture in three batches, alternating with two additions of buttermilk, and whisking well after each. Stir together the baking soda and vinegar in a small bowl (it will foam); add mixture to the batter, and mix on medium speed 10 seconds.

Pour batter into prepared tin and bake for 30-40mins checking at 30mins. When a skewer inserted comes out clean then its ready to go.

Allow to cool before you frost


Cream Cheese Frosting

1 cup icing sugar/mixture

1 250g block cream cheese

3/4 teaspoon pure vanilla extract or 1 vanilla bean


Sift icing sugar into bowl. Using an electric mixer mix through cream cheese until smooth then add vanilla.


If you do want chocolate frosting use CSR chocolate icing mixture or replace 1/4 cup of icing mixture for cocoa powder.
